anchovy pasta mediterranean-style

1 can King Oscar Anchovies (Flat)
200g pappardelle pasta
1/4 cup chopped spring onions
8-10 cherry tomatoes, cut in quarters or halves
1/2 cup fresh basil leaves
1/2 cup cashew nuts
1 tablespoon olive oil
1 tablespoon balsamic vinegar
Parmesan cheese, grated

Cook pasta according to package instructions. Drain. Quickly sauté King Oscar anchovies (drained) with spring onions, cherry tomatoes, basil leaves, cashew nuts, olive oil, and balsamic vinegar. Cover pasta with the hot sauté mixture. Top with grated Parmesan cheese. Serves 2.
