herring in baked potato

King Oscar Herring in Oil, drained
4 potatoes (about 400g)
1/4 white onion, sliced or chopped
Dill pickle or sour cucumber, sliced
4 teaspoons sour cream
Salt and pepper

Wash unpeeled potatoes and cover each in baking foil. Bake potatoes approximately 35 minutes at 200°C. Remove from foil, and cut potatoes in half. Put drained herring inside the potato along with onion and pickle. Top each potato with one teaspoon sour cream. Salt and pepper to taste.
