simple sardine salad

2 cans King Oscar Sardines in Olive Oil
Belgian endive
2 tomatoes
1 yellow bell pepper
1 or 2 mushrooms
1 tablespoon chopped dill, parsley, chives

3 tablespoons olive oil
1 tablespoon vinegar
1 clove garlic
Salt and pepper

Slice lettuces, endive, tomatoes, bell pepper, and mushrooms. Toss in chopped herbs. Make dressing by mixing olive oil, vinegar, crushed garlic, and salt and pepper to taste. Toss salad with dressing. Spread sardines on top of salad. Serves 6.
