tuna salad with vegetables

2 cans King Oscar Tuna Fillet or Chunks in Oil, drained
1 medium head lettuce (Romaine or Iceberg)
3 tomatoes, cut in small wedges
3 hard-boiled eggs, cut into quarters
Red onion slices
1 can green peas
Black olives
Fresh lemon juice
Salt and pepper

Tear lettuce into small pieces and place on a large plate or in a salad bowl. Add tomatoes, eggs, onion, peas, olives, and tuna. Sprinkle with lemon juice. Add salt and pepper to taste. Top with preferred dressing. Serves 4.

vinaigrette dressing
Combine together 3/4 cup olive oil, 4 tablespoons wine vinegar, 1 teaspoon pepper, 2-3 teaspoons sugar.

yogurt garlic dressing
Combine together 2 minced garlic cloves, 1/2 cup plain yogurt, 2 teaspoons chopped fresh herbs (your choice of dill, parsley, thyme, oregano and/or basil).
