herring with pepper sandwich

2 cans King Oscar Herring Fillets in Cayenne Pepper Hot Sauce
4 slices rye bread
4 hard-boiled eggs, quartered
1/4 red onion, chopped
1/4 yellow onion, chopped
1 clove garlic, chopped
3 tablespoons red bell pepper, finely chopped
1 tablespoon cappers
2 tablespoons olive or cooking oil
1 tablespoon wine vinegar (optional)
Mixed baby greens or arugula
Fresh dill, chopped
Salt and pepper, to taste

Mix together the onion, garlic, bell pepper, cappers, oil, and vinegar (optional). Season with salt and pepper. Top rye bread with King Oscar herrig cut into pieces, greens, egg slices, and mixture. Garnish with dill. Serves 4.
